A perfect salad to bring in the cool, crisp autumn weather; walnuts and apples are the bounty of the autumn harvest. This salad makes a fine lunch, is perfect for potlucks, and can be a wonderful snack any time of day. It gives you protein, essential fatty acids, is vegan, gluten & sugar free, and is chock full of vitamins and minerals.

Ingredients-

Salad

  • 4 apples, chopped (I like Granny Smith or Pink Lady. What is your favorite?)
  • 4 stalks of celery, chopped
  • 1/2 Cup walnuts
  • 1/2 Cup raisons/grapes

Mix the above ingredients together and toss into a pretty bowl.

Now, mix up the dressing in a blender or food processor.

Dressing

  • 1 C hemp seeds
  • 1/4 C lemon juice
  • 3/4 C orange juice
  • 3 medjool dates
  • 1/2 t salt

Pour over your apple mixture and dive in.

Want to take the recipe up a notch in terms of nutrition?

•Sprout (soak in pure water) your walnuts overnight to increase their nutrient value & help make them easier to digest. If you have extra, dehydrate them (in a dehydrator or an oven set on the lowest temperature) to get the crunch back, and store them in a cool dark cupboard to munch on later, or use in more recipes.

•Juice your lemons and oranges yourself, as opposed to using store bought juice.

•Be sure all your ingredients are organic.

•Use sea salt or Himalayan pink salt
